Grown on an aromatic shrub in the citrus family, Szechuan pepper is not actually a pepper at all. It is, in fact, the outer pod of the fruit from Zanthoxylum bungeanum. This ingredient is now found in Tibetan, Bhutani, and Japanese cooking, and there, they are known for their tart, slightly peppery flavor, and unique mouth-tingling sensation.
